How to store spices so they keep their aroma

Spices don't really "go off" — they fade. The flavour and aroma sit in delicate volatile oils, and heat, light and air quietly drive them out. Good storage is mostly about slowing that down.

The essentials

  • Airtight, always — glass jars with tight lids beat open packets or clip bags.
  • Cool and dark — a cupboard away from the stove, not a rack above it or a sunny shelf.
  • Buy whole where you can — whole spices hold their aroma far longer than powders.
  • Grind fresh — a few seconds in a grinder or mortar just before cooking gives the biggest lift.

Why whole wins

A whole peppercorn or cardamom pod keeps its oils locked inside its shell. The moment you grind, you expose all that surface area to air and it starts to fade. That's why freshly ground pepper smells so much stronger than the tin that's been open for a year.

Keep it whole, keep it sealed, keep it cool and dark — and grind as you go.
